Canned food is a wide variety of processed foods that are easy to store and use and last long. The quality of canned foods depends on the raw material selected, the cans used and the tests and analyzes to be carried out during the production stages. Errors in production processes will result in the degradation of canned food (physical, chemical and microbial degradation). In this case, it will pose a risk to human health.

In general, tin cans are preferred in the production of canned food. Technically speaking, in the production of canned foods, foodstuffs are purified from heat by microorganisms and stored in hermetic conditions and hermetic boxes. The cans used for this purpose are coated with lacquer and provided to be resistant to corrosion. In this way, the canned contents do not interfere with the can.

The corrosion resistance of the lacquered tin can is determined by some test methods. During production, the box made of lacquered tin suitable for canned food should be used. For this purpose, when choosing the box, the size of the box, pressure, paint and the characteristics of the food to be placed in the box must be taken into consideration.

Box closure is one of the most critical. Therefore, it is necessary to avoid possible errors by performing box clamp analyzes. In addition, tin plate corrosion tests are also carried out in canned boxes.

The main physical analyzes performed in tin cans are: net headspace determination, filtration weight determination, net weight and fill rate determination.

All these issues are included in the Turkish Food Codex and related standards.
